Let's go fly a kite

Today we had a lot fo fun. The sun was shinning and the wind was blowing, so I took the kids out back to fly their kites. They could hardly wait, since they have had to look at them all winter. I picked the kites up for next to nothing last fall. They have been pestering me for months every time the wind blew. Ah, but today the moment arrived. First I got Liza's in the air, then made many attempts to get PJ's up. For what ever reason, his would not stay in the air. But Liza kept her's up for quite a while. She had so much fun. I don't think the excitement will wear off any time soon.


On the Menu Italin Pork Chops

4 pork loin chops

1 cup flour, seasoned with salt and pepper

2 eggs, scrambled

1 cup Italian bread crumbs


In a large skillet, heat enough olive oil to cover bottom of pan. Dredge chops in flour, then in egg, then cover in bread crumbs. Add to hot oil, cook 5-6 mins per side depending on thickness.

Happy days, frustrating days



So today my family and I went to a birthday party for a friend's daughter. She turned 1. It was so much fun. I happily volunteered to make her birthday cake. I am clinically obsessed about that kind of thing. I think I enjoyed it way way to much. Shan wanted to do a ladybug party, so I made a whole cake dedicated to the theme. I made a large ladybug and 2 smaller ones laying in the grass. (Imagine 2 red lollipops as antenae. I didn't have them in the cake when I took the picture) It took me all day yesterday, but it was worth it. It makes me so happy to put the skills I have to use. To make it even better, everyone loved the cake. It was all so rewarding.




Now to the ruin of the day. I have been trying for weeks to get a rebate promised to me on black Friday paid. I am just out of ideas. So I went to a department store, bought an $80 set of knives for my sister-in-law as a Christmas gift solely because of the promised $40 rebate check. November 30, I send in the form. Cuisinart recognizes they have received and verified the rebate, but nearly 15 weeks later, still no check. What am I supposed to do? Thinking about calling Bill Gephart. Think he can get me my check?


TODAY'S MENU: Jamaican Jerk Tacos


1 chicken breast per 2 people, cooked and shredded

1 tbls jerk seasoning

1 mango

1 cup pineapple, fresh or tidbits

1/2 red onion

1 red pepper

"Jamaican Me Crazy" sauce

Arugala

Flour tortillas


Toss chicken with seasoning. Sautee fruits and veggies in light oil. Build tacos: chicken, sauce, veggie mix, arugala onto torilla.
